Love the taste or hate it, apple cider vinegar has some pretty incredible health benefits. Made from fermented apples, research on this potent liquid has revealed promising results, including combating insulin and glucose spikes in type 2 diabetics, not to mention aiding weight loss. It can also soothe a sore throat and may relieve other symptoms of the flu, like nasal congestion and cough. Read on for some more reasons why you should add it to your health routine.
Like most things, the quality of the apple cider vinegar (ACV) matters. When purchasing ACV, select only raw organic vinegar—unlike other refined clear vinegars, this will be a murky brown color with sediment-like substance that settles to the bottom. It might not look pretty, but it’s the best and only option you should choose. You’ll also see labels that say “with the Mother,” sounds odd, but this means that it includes living nutrients and bacteria—this is the cobweb-like substance you’ll see floating in the vinegar.
ACV Uses and Benefits
There are various ways you can take ACV—take a small dose of around 1 to 2 teaspoons a day, dilute a spoonful in a glass of water, add it to an organic juice (preferably made in your juicer) or even mix it into your salad. Be cautious with continuous use of undiluted ACV; it is highly acidic and can be harsh on your tooth enamel. Here are a few of the possible benefits of ACV use—we encourage you to do more research to find other potential health benefits:
ACV is rich in potassium which aids the transmission of nerve impulses and helps to build muscles.
It’s high in acetic acid which can slow your body’s digestion of starch—this is what may lower the rise in glucose after a meal. A study done in 2004 and cited in Diabetes Care (an American Diabetes Foundation publication), demonstrated that participants with type 2 diabetes, prediabetes and even those without diabetes had better blood glucose readings when they took ACV before a meal. Those with type 2 saw a 25 percent improvement in their blood glucose levels.
Some research has also indicated ACV use may lower cholesterol and blood pressure.
ACV can balance your pH level due to its alkaline-forming properties. This has also been shown to regulate the presence of candida—which is a yeast-like fungus that aids digestion and nutrient absorption. When your body overproduces candida, it can cause many different health issues including fungal infections, digestive issues and chronic fatigue.
It may help relieve heartburn. It sounds counterintuitive, but some people get relief from taking a teaspoon of apple cider vinegar followed by a glass of water.
Try gargling ACV when you have a sore throat; the antibacterial properties of the vinegar may neutralize the infection. It can also help drain your sinuses when you’re stuffed up.

Paleo Chicken Pumpkin Curry Sliders

Paleo Chicken Pumpkin Curry Sliders

 

Ingredients

 

  • 1.5 lbs ground chicken
  • ¼ cup canned pureed pumpkin
  • 1 cup almond flour
  • 2-3 tablespoons curry powder (I used A LOT so you don’t need to go crazy if curry isn’t your totes fav thing)
  • 1 teaspoon garlic powder
  • 1 teaspoon granulated onion
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1-2 tablespoons your choice of fat

 

Instructions
  1. Add all ingredients together in a large bowl. Mix well to combine.
  2. Heat up a decent sized skillet under medium-high heat and add a bit of fat to the pan to coat.
  3. Use a large spoon to scoop up a ball of the pumpkiny meat and slightly shape with your hands. No need to be anal, you’ll be smashing them later anyways.
  4. Add your dolloped spoonfuls of pumpkiny meat to the skillet to cook.
  5. Once the bottom end of the dollop has seared on the bottom and a bit brown, use a spatula to flip it and smoosh it down a bit to make a flatter patty.
  6. Cover and let cook for about 3 minutes.
  7. Eat however you’d like. I ate with veggies. It was ridiculous delish.

Chicken Stir Fry with Broccoli & Cabbage

Chicken Stir Fry with Broccoli & Cabbage Prep: 25 mins Cook: 20 mins Total: 45 mins Serves: 4
Ingredients;

•6 medium cloves garlic, smashed and finely chopped
•3″ piece fresh ginger root, peeled and finely chopped
•1 bunch scallions, light and dark parts separated, light parts finely chopped and dark green parts cut into 2″ pieces and set aside
•1¼ pounds boneless, skinless chicken thighs, cut into bite sized pieces
•2 Tablespoons toasted sesame oil, divided
•4 Tablespoons Coconut Aminos, divided (see NOTES for Soy substitution)
•⅛ tsp + ¼ tsp ground white pepper, divided
•½ tsp + 1 tsp kosher salt, divided
•⅛ teaspoon crushed red pepper flakes (or more to taste)
•⅔ cup chicken broth or stock plus a couple more splashes for cooking
•1½ lbs green cabbage, core removed and cut into 1″ pieces
•1¼ lb head of broccoli, stalks trimmed and cut into 1″ pieces, florets cut into even bite sized pieces
•½ lb white mushrooms, cleaned, stems trimmed and quartered
•¼ cup cold water
•¼ cup tapioca flour
•1 Tablespoon virgin coconut oil, divided
•cauliflower rice for serving

Directions;

1.Grab garlic, ginger and scallions.Cut the scallions so the whites and darks are divided.
2.Peel garlic, smash cloves and finely chop. Peel ginger with a teaspoon, smash and finely chop.Smash and finely chop scallion whites.
3.Cut scallion greens into 2″ pieces and set aside.
4.In a small bowl, combine chopped garlic, ginger and scallion whites.
5.Trim chicken thighs of any big pieces of visible fat and cut into bite sized pieces (about 1½ to 2″). Add 3 Tablespoons of the garlic, ginger and scallion white mixture to the chicken pieces along with 1 Tablespoon of toasted sesame oil, 2 Tablespoons of coconut aminos, ⅛ teaspoon ground white pepper and ½ teaspoon of kosher salt. Mix until well combined, cover and place in refrigerator to marinate while you finish prepping the vegetables.
6.Remove core from cabbage and chop into 1″ pieces. Don’t worry if they are not even or perfect. There will be some bigger chunks here and there.
7.Wash mushrooms, trim ends and quarter.
8.Trim ends of broocoli and discard. Remove the florets and cut into even bite sized pieces. Set aside.
9.Cut the outer edge off of the broccoli stalks. If you are very patient or have more time, peel with a vegetable peeler. Slice the stalks lengthwise into thin strips. Stack the strips and slice lengthwise in half. Slice into 1″ pieces and set aside with chopped cabbage.
10.Grab remaining garlic, ginger and scallion white mixture and add remaining 1 Tablespoon toasted sesame oil, 2 Tablespoons coconut aminos, ¼ teaspoon ground white pepper and 1 teaspoon kosher salt. Also add in crushed red pepper flakes and ⅔ cup chicken broth. Stir to combine.
11.Finally, combine cold water with tapioca flour until dissolved.
12.Heat wok or very large skillet over high heat. Add ½ Tablespoon coconut oil. Once hot, add in cabbage and broccoli stalks. Cook 2 to 3 minutes, stirring constantly.
13.Add a splash chicken broth, cover and cook 4 to 5 minutes until tender.
14.Add in broccoli florets and mushrooms. Cook 1 to 2 minutes, stirring constantly.
15.Add a splash of chicken broth, cover and cook 1 to 2 more minutes. Remove vegetable mixture from wok to a serving bowl.
16.Return wok to heat, add remaining ½ Tablespoon coconut oil. Once hot, add in chicken thighs. Cook untouched for 2 minutes.
17.Stir to mix and scrap the bottom of the wok, continue cooking for an additional 2 to 3 minutes, stirring constantly.
18.Add garlic-coconut amino sauce to chicken and bring to a rapid boil. Cover and cook until chicken is cooked through, about 2 to 3 minutes.
19.Remove lid, pour in tapioca starch mixture and immediately stir to combine. The sauce will thicken rapidly.
20.Toss the vegetables back in along with the scallion greens. Toss to with sauce, remove from heat and serve immediately. Enjoy!

Paleo Oatmeal Raisin Cookie Dough Minutes to Prepare: 5 Number of Servings: 6 Ingredients 2 tbsp almond butter 4 tbsp applesauce 1 tbsp raisins 1 tbsp coconut flour or shredded coconut 1/4 tsp cinnamon 1/4 tsp vanilla stevia or honey (about 1 tsp honey or 1/2 dropper stevia) Opt: 1 tbsp walnuts
Directions: Mix everything together and chill before serving. Noms.Serving Size: Makes 3/4 cup – serving size 2 tbsp

Dr John Theeck in the Villages, Florida Chiropractor

Dr. John C Theeck is a wellness physician with a passion to transform lives.  After earning his undergraduate at Eastern Michigan University in Sports Medicine he continued his passion for health & wellness by earning his Doctorate degree at Palmer College of Chiropractic. Post Graduated Dr. Theeck underwent training with some of the top chiropractors in the US.
Dr. John travels all over North America, learning and researching cutting-edge techniques to help people reach their health potential.  Dr. John has appeared on public radio and businesses all over central Florida promoting healthy living. Studies have demonstrated that approximately 90% of all disease is lifestyle induced. Dr. John is passionate about teaching how to avoid these lifestyle pitfalls and helping people build a powerful mindset toward their health. Dr John recently founded Legacy Living, which is focusing on transitioning the body with the Paleo Lifestyle.

The Villages has always been a second home to Dr. Theeck, visiting his grandparents on holidays and summer vacations he fell in love and knew he always wanted to dedicate his life to helping The Villages’ community. In 2010, Dr. Theeck finally had the honor to call The Villages his home by opening his own wellness center in Laurel Manor.

Dr. Theeck has helped thousands of patients, some as young as a few hours old to his eldest a centenarian. His devotion to health & wellness has allowed Dr. Theeck to travel internationally on multiple mission trips to treat thousands of unfortunate natives. He serves on a humanitarian board for a chiropractic mission group. Dr. Theeck was trained by some of the most elite doctors in the medical field that were selected to provide chiropractic care in London to the US Olympic teams. Dr. Theeck provides similar advanced spinal aligning to The Villages Charter School Football team
Legacy Clinic is dedicated to using state-of-the-art therapy to correct the cause of each patient’s problems, not merely to mask them or cover them up. Dr. Theeck’s goal is to educated his patients, and help them understand the cause of their problems so they can correct that cause and function at 100 percent.  When Dr. Theeck’s patients finish their treatments they walk away with knowledge of how to take care of their body.
