Mango Salsa Recipe

This recipe is a sweet treat that can be used as a topping for chiken or burgers and can also be used as a helathier dip.

You will need:

2-3 ripe mangos, diced

1 red bell pepper, chopped

1/2 cup of chopped red onion

1 jalapeno, minced

1 lime or lime juice concentrate

1/4 cup of fresh cilantro, chopped

To make:

In a large bowl, combine the mangos, bell pepper, onion, jalapeno and cilantro. squeeze the juice of one lime into the bowl and mix well. You can add salt to taste if needed. Let the salsa sit for at least 10 minutes for the best results.

Paleo Breakfast Recipe

This recipe is healthy and delicious. Its like finding ice on the equator!

INGREDIENTS

breakfast sausage patties

avocado, mashed

kosher salt

Freshly ground black pepper

large eggs

chives, for garnish

Hot sauce, if desired

 

DIRECTIONS
  1. Heat breakfast sausage according to instructions on box.
  2. Mash avocado onto breakfast sausage and season with salt and pepper.
  3. Spray a medium skillet over medium heat with cooking spray, then spray the inside of a mason jar lid. Place mason jar lid in center of skillet and crack an egg inside. Season with salt and pepper and let cook 3 minutes until whites are set, then remove lid and continue cooking.
  4. Place egg on top of mashed avocado. Garnish with chives and drizzle with your favorite hot sauce.

Bacon Wrapped Dates Recipe

This recipe is great for an hors d’oeuvre, a side plate item or just a quick snack. I originally tried these in a Spanish tapas restaurant and liked them so much I decided to try my hand at making them. The recipe is very simple and requires little.

You will need:

bacon (thinly sliced)

dates (buy them already pitted if possible)

almond slivers (optional)

toothpicks

To Make:

Preheat the oven to 425 degrees

If you are using almonds, stuff one or two slivers into each date.

Cut the bacon strips down the middle. They should be about 4-5 inches long after.

Wrap the bacon around the date and place a toothpick to hold in place.

On a foil lined baking sheet, place the bacon wrapped dates evenly spaced.

Cook for approximately 15 minutes, then turn each date and cook again until evenly cooked.

These dates are best served at room temperature or cold. Serving them hot could cause burns because of the juice inside

Ground Turkey and Spinach Stuffed MushroomsStuffed Mushroom

Ingredients
  • 2 teaspoons coconut oil
  • 6 large portobello mushroom caps, cleaned and gills removed (gently scrape it out with a spoon)
  • 1 small onion, diced
  • 1/2 pound ground turkey
  • Handful of baby spinach leaves
  • 6-8 grape tomatoes, sliced (and roasted if you prefer)
  • Salt and pepper, to taste (Italian seasoning would be great too!)
Instructions
  1. In a large skillet over medium high heat, melt about 2 teaspoons of coconut oil. Place the mushrooms into the skillet and let cook until softened, about 5-7 minutes. Flip them halfway through. Set aside on a plate.
  2. In the same skillet, add the onion and sauté until softened, about 3 minutes. Then add the ground turkey to the pan and break it up into small pieces with a spatula or wooden spoon. Cook until it’s all cooked through. Sprinkle salt and pepper and other seasonings, if using.
  3. Remove from heat and add the baby spinach leaves. The residual heat should wilt the spinach easily.
  4. To assemble: use a small spoon and scoop the turkey spinach filling into the caps of the mushrooms. Top with grape tomatoes. Serve warm!
